Black Bean and Chicken Tacos

Oh these are so yummy!
2 chicken breast --cooked and cubed
4 tsp. lime juice
2 T. olive oil,divided
4 green onions,thinly sliced
2 cloved garlic, crushed
1-15 oz. can black beans, drained and rinsed
1 c. Fresh tomatoes diced
1 tsp salt
pinch of cayenne pepper
flour tortillas
1/2 c. Monterey jack cheese
sour cream
Coat cubes of chicken with 1/2 limejuice and 1/2 of the oil. Saute in pan until warm. Remove chicken and using the same pan add the rest of the oil and saute garlic and green onions until tender; add beans and tomatoes until warm. Then add the remaining lime juice, salt and chicken. Cook until heated through, then add cayenne pepper to taste. Fill tortillas with chicken and add sour cream and cheese for garnish.

Shortcut Chicken Parmesan

I got this recipe from the Kraft Foods site..They always have great easy recipes!
4 small boneless skinless chicken breast halves (1 lb.)
1/2 pkt. (1/4 of 6-oz. pkg.) SHAKE 'N BAKE Original Chicken Seasoned Coating Mix
1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
2 cups rotini pasta, cooked, drained

PREHEAT oven to 400°F. Coat chicken with coating mix and bake 15 min. as directed on package.
ARRANGE chicken in single layer in 8-inch square baking dish. Spread tomatoes over chicken. Sprinkle with cheese.
BAKE 15 min. or until cheese is melted. Serve over hot pasta.

Chilli Burgers


2 lbs. ground beef
1 can Red enchilada sauce
1 can Chicken Gumbo Soup
1/4 c. brown sugar
2 T. mustard
2 T. ketchup
Brown hamburger,drain. Add soup and enchilada sauce (can be spicy, may not want to use the whol can of sauce). Add rest of ingredients. May add mustard and ketchup to taste. Let simmer uncovered until thick. Serve on Hamurger buns.

Broccoli Cheese Soup


6 C. chicken broth
1 C. onion diced
2 tsp. salt
1 lg. head of broccoli chopped (or use 3/4 bag frozen broccoli chopped)
1 1/2 C.flour
1 1/2 C. butter
4 C. half &half
4 C. 2% milk
15 oz. Cheese Wiz

Boil 6 C. chicken broth with diced onion, chopped broccoli, and salt. In another pan, melt your butter and then add your flour until a smoth paste. Add your half and half to the paste and stir. Then add your milk all at once and stir until smooth. Bring to small simmer and then add cheese wiz and bring to a boil until thickened. Test to see if broccoli and onions are tender. When tender, add pot of smooth cheese sauce into other chicken broth and veggies pot. You might need to whisk. Enjoy! So good in a bread bowl or with yummy rolls!

Starting up...

I decided I needed to start a recipe blog for all my new recipes I find on other blogs, so I can find them and share them easily! I have a "menu plan monday" each monday, so I needed a place I could store the recipes for that! Hope this is helpful for someone.
