Homemade OREO ice cream


I haven't tried this yet, but it sounds fun! You don't have to use an ice cream maker...you just stir it up and freeze....


OREO ICE CREAM

3 egg yolks

14 oz can Eagle Brand milk

4 tsp vanilla extract

1 cup crushed Oreo cookies (about 12 cookies)

2 cups whipping cream – already whipped

Beat yolks, stir in Eagle Brand milk and vanilla. Fold in cookies and whipped cream. Pour into aluminum foil lined 2 qt container – cover and freeze for 6 hours.

I was just reading a blog and found these ideas for items to roast over an open fire and I need to document it so I'll remember them.


  • Hot Dogs (of course)

  • Marshmallows (duh)

  • S’mores - I like to melt my chocolate first in the microwave, then spread it on the graham cracker, placing my hot toasty marshmallowon top.

  • More S’mores - Use Fudge Stripe Cookies instead of the graham cracker. Kit Kats are a great chocolate substitute.

  • Doughy Biscuits - Wrap a Pillsbury biscuit around your stick and slow cook it over the fire. Then dip in melted butter. Yum.

  • Tinfoil Dinners - Place your raw ground beef in tinfoil, with cut carrots and potatoes. Then wrap twice in tinfoil and place on hot coals. Turn once or twice.

  • Candy - Put Starbursts on sticks and get them super soft and chewy.

  • Along with the doughy biscuits idea bring Lil Smokies, those mini smoked sausages , and biscuits in a can. Wrap the sausage in a piece of biscuit and put the whole thing on your roasting stick and cook over the fire.

  • Roast corn on the cob - just smother the cob in butter and generously sprinkle with parmesan cheese!

  • S’mores are good with Reese’s cups, too!

  • For tin foil dinners….try putting a couple pieces of bacon on the bottom, then your hamburger with some onion soup mix sprinkled on top, then carrots and potatoes. Great flavor!!!!

  • Try using different candy bars, such as snickers or twix? They are to die for when they are put between the melted marshmallows and graham crackers.

Aebleskivers


My SIL, Kim made these for us when we were in AZ. They are a special Danish pancake and they are yummo! I don't have her exact recipe, but this is one I found on another blog.
2 cups Buttermilk
3 eggs Separted
2 cups Flour
1/2 t salt
2 T sugar
1 t baking powder
1 t baking soda
Mix egg yokes with buttermilk and dry ingredents. Fold in stiffly beated egg whites.
Cook in well greased Aebleskiver pan.
Top with berries and whip cream or just sprinkle powdered sugar.
You can vary the topping depending what you have but traditionally you would use a kind of fruit or jam and whipped cream or a sprinkling of powdered sugar. We split them and dipped them in sugar....mmm good!
