PB Cup Brownies

these sound so amazing..i can't wait to try them for our Super bowl party!
I have never heard of "chocolate extract"...sounds yummy!
PB Cup Brownies
4 ounces unsweetened chocolate
½ cup butter, softened
½ cup creamy peanut butter
2 cups lightly packed light brown sugar
4 large eggs
2 tsp chocolate extract
1 cup all-purpose flour
2 cups (12 oz.) peanut butter chips
12 miniature peanut butter cup candies, cut into quarters

1 Preheat oven to 325°F. Line a 9x13-inch pan with foil; grease the foil. (*see tips below)
2 Melt chocolate in glass baking cup in microwave in small bursts of 30 seconds; stir after each burst and remove from microwave when melted and smooth. Set aside to cool slightly.
3 In a large mixing bowl, mix butter, peanut butter and brown sugar with an electric mixer. Beat in eggs and chocolate extract. Mix in melted chocolate. Blend in flour. Stir in peanut butter chips.
4 Pour batter into prepared pan. Top evenly with peanut butter cup candy pieces, pressing pieces lightly into the batter.
5 Bake 25 to 35 minutes. Watch closely and remove from oven when toothpick inserted into center comes out clean. Let cool completely.
6 Refrigerate until brownies are well chilled- if overnight, cover with plastic wrap. When ready to cut, remove from the refrigerator and turn onto a cutting board. Carefully peel off the foil and use another cutting board to flip the brownies back upright. Use a large, sharp knife to cut into squares.
Yield: About 25 brownies
Cooking Tips
*You may also wish to use a quarter-sheet pan. Just line the pan with foil and spray with nonstick spray.
*Chocolate extract can be found at specialty and gourmet markets like Whole Foods. If you don't want to use chocolate extract, try using vanilla in its place (it just won't get that extra chocolate flavoring).
**To get nice, clean cut brownies, chill well and use a sharp knife to cut. Wipe knife with paper towels between cuts. Cut off edges before cutting into squares if you'd like to have all edgeless brownies.

Toffee Squares


These look delicious...thanks to Crazy Crafty Cousins for the yummy recipe and pic. Shee says it's mix between a cookie and toffee...YUMM!


Toffee Squares
1 cup Butter
1 cup Brown Sugar
1 Egg yolk
1 teaspoon Vanilla
2 cups Flour
1/4 teaspoon Salt
6 Hershey Milk Chocolate Bars
Beat butter, brown sugar, egg yolk and vanilla together until creamy. Slowly add flour and salt until well blended.
Bake at 325 for 13 minutes or until lightly browned. It will be soft, do not over bake.
Remove from oven and immediately place unwrapped chocolate bars on top of hot cookie base.Let it stand a few minutes until chocolate is melted. Spread melted chocolate evenly to cover entire cookie base. Cut into squares after chocolate has cooled and set.

Easy Honey Mustard Chicken

Honey Mustard Chicken
boneless, skinless chicken breast
1/3 cup melted butter
1/3 cup honey
2 tablespoons mustard
1/4 teaspoon salt
Mix butter, honey, mustard & salt and pour over chicken.
Bake at 350 degrees for about an hour.

OREO Fudge

Can you only make Fudge during the Holidays?? Because I really want some of this! I am thinking it works great for Valentine treat, right?

Oreo Fudge
1 12 ounce can evaporated milk
4 1/2 cups granulated sugar
1/2 cup butter, room temperature
1 12 ounce package semi sweet chocolate chips
1 13 ounce jar marshmallow cream
4- 1.55 ounce Hershey’s milk chocolate bars, chopped
1 tablespoon pure vanilla extract
2 cups crushed Oreo cookies

1. In a large saucepan, heat the evaporated milk and sugar until boiling. Continue heating over medium-high heat and at a low boil for about 10-12 minutes, or until it has reached the soft ball stage. (Check this by adding a small drop to a bowl of cold water. If you can roll it into a soft ball, it is ready.)

2. In a mixer, add the butter, chocolate chips, marshmallow cream, and chocolate bar chunks. Pour in the milk and sugar mixture and whip until all the ingredients are melted and smooth. Add in vanilla extract. Stir in the Oreo’s.

3. Pour directly into a greased 9X13 pan and refrigerate until set, about 1 hour.

Here's another goodie recipe from my new found fave site According to Kelly. This one looks like a keeper....I can't wait to try it!

Suprise Snickers Cookies
ingredients:
2 sticks butter (softened)
1 cup light brown sugar
1 cup sugar
3 1/2 cups all purpose flour (sifted)
2 eggs
1 cup creamy peanut butter
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
1 bag snickers miniatures
1 bag dove brand milk or dark chocolate (or any other melting chocolate will do)
instructions:
1. combine the butter, peanut butter & sugars using a mixer on a medium to low speed until light and fluffy.
2. slowly add the eggs and vanilla until thoroughly combined. then mix in the flour, salt & baking soda.
3. cover and chill dough for 2-3 hours.
4. unwrap all of the snickers miniatures (make sure to eat one or two, that's my favorite paft of baking... taste testing)
5. remove dough from refrigerator. divide into 1-tablespoon pieces & flatten.place a snickers miniature piece in the center of each piece of dough.
6. form each piece of dough into a ball around the snickers miniatures piece.
7. place on a greased cookie sheet & bake at 325 degrees for 10-12 minutes. (baking time and temperature may need to be adjusted if using more than 1 tablespoon of dough per cookie.)
8. let cookies cool on baking rack or wax paper.8. "spruce up" your cookies by drizzling melted dove brand promises milk or dark chocolate over the top of each cookie!

Fettuccinni Carbonara

1/2 lb. fettuccine, uncooked
1 cup frozen peas
1/4 cup PHILADELPHIA 1/3 Less Fat Cream Cheese
1/4 cup KRAFT Light Classic Caesar Dressing
1 Tbsp. flour
1 cup fat-free milk
1 pkg. (6 oz.) OSCAR MAYER Smoked Ham, cut into short strips
1/4 cup chopped fresh parsley
3 Tbsp. KRAFT Grated Parmesan Cheese
Make It
COOK pasta as directed on package, adding peas to the boiling water for the last 3 min.
MEANWHILE, beat cream cheese, dressing and flour in medium saucepan with whisk until blended. Gradually add milk, stirring constantly until mixture is well blended. Add ham; cook on medium-low heat 5 min. or until heated through, stirring occasionally.
DRAIN pasta mixture; return to pan. Add sauce mixture; mix lightly. Cook 2 to 3 min. or until heated through, stirring occasionally. Top with parsley and Parmesan.

yumm...what a find!

OK-so i totally scored on finding this blog...According to Kelly...I have loved all of her posts. She has crafts and recipes, etc. These ones looked amazing and i can't wait to try them all! {recipe & pic from} According to Kelly

Trifle

1 big pkg. fudge brownie mix
2 big pkg. instant chocolate pudding mix
8 heath bars, crushed or 2 bags of skor chips
1+ container whipped topping (i love cool whip, so i tend to go heavy)chocolate curls (optional)
prepare brownie mix, bake per directions in 9x13 inch pan. Let cool and then crumble. prepare pudding per the package directions, chilling for 5-10 minutes. place a layer of crumbled brownies in bottom of 3-quart trifle dish (or any bowl), top with a layer of the pudding, crushed candy bars and whipped topping. repeat layers, ending with the whipped topping. garnish with chocolate curls. chill 8 hours (or as long as you have... it gets better the longer you chill, but i've eaten it right away too.)
this always gets rave reviews & it is so simple to make. plus, you can keep on the ingredients on hand (in the cupboard or freezer) so it's great at the last minute. short on time? need to make it even faster? instead of actually baking brownies, just buy the pre-made brownie bites in your grocers bakery!

5 minutes in Heaven....

5 minutes in heaven cake, aka chocolate chip bundt cake
1 yellow cake mix with pudding
1 sm. pkg chocolate instant pudding (or use 3/4 of a large box like i did)
1/2 C. sugar
3/4 C. vegetable oil
3/4 C. water
4 large eggs
1 C. sour cream
1 C. semi-sweet chocolate chips
combine the first 3 ingredients. stir w/ fork or wire whip to remove large lumps. add remaining ingredients except chocolate chips. stir until smooth (i like to use a hand beater). stir in chocolate chips. pour into greased/floured bundt pan. bake @ 350 for approximately 1 hr. cool for 10 minutes on a wire rack in the pan. remove from pan and cool completely. sprinkle with powdered sugar and serve!

S'more Cookie Bars

s'more cookie bars
ingredients:
1/2 cup (1 stick) butter or margarine, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
3/4 cup graham cracker crumbs
1 teaspoon baking powder
1/4 teaspoon salt
4 (1.55 oz. each) HERSHEY'S Milk Chocolate Bars
1 cup marshmallow creme (or a small handful of mini marshmallows, whatever you have on hand)
directions:
1. heat oven to 350°F. grease 8-inch square baking pan. (you may want to line it with foil, for easy lifting out & cutting)
2. beat butter and sugar in large bowl until light and fluffy. add egg and vanilla; beat well. stir together flour, graham cracker crumbs, baking powder and salt; add to butter mixture, beating until blended. press half of dough into prepared pan.
3. arrange chocolate bars over dough, breaking as needed to fit. spread with marshmallow creme (or mini marshmallows). scatter bits of remaining dough over marshmallow; carefully press to form a layer.
4. bake 30 to 35 minutes or until lightly browned. cool completely in pan on wire rack. cut into bars. 16 bars.very rich, but oh! so heavenly. it definitely hits the spot!
